Lesson From Cream Teas

The cream tea habit is something that I have picked up from my years in England.

There’s something magical about eating a scone with clotted cream and strawberry jam that I can’t describe. However, for it to taste “right”, the two ingredients must be in the right proportion.

Things in proportion are beautiful. And, in the case of Devonshire cream tea, tasty.

Apart from proportionality, the order of things is important. Cream first, and then jam. Unless, of course, you’re from Cornwall, or you’re the Queen of England.

Keep things in proportion. It’s a recipe for most things that will matter. Like, a warm scone.
